White tea is the most natural, and least processed, of all grades of tea. Our Pai White is pai mu tan (“White Peony”) grade white tea, freshly plucked in Fujian Province, laid out on large blankets to dry naturally in the sun and, er, that’s about it. This produces a tea which is light and delicate, with a slight nutty character which distinguishes it from other white teas (especially those which aren’t “white” at all but are just pale green teas masquerading as the real thing...)
Pai White can be enjoyed hot or cold. Since it’s such a delicate tea, don’t use boiling water but let the kettle cool for a couple of minutes first. Then add the water to the tea and leave it to brew for another 4-5 minutes. All sorts of claims are made for the health-giving properties of white tea. Does it really reduce blood pressure and lower your cholesterol count? Can it really boost the immune system and tone the skin? We couldn’t say for sure, but for such a sublime brew we’re happy to give it the benefit of the doubt!
